Zandile’s Roasted Potato Salad

Share this recipe:

5 Medium potatoes, cubed and roasted
4 Eggs boiled and cut into wedges
Bacon, diced
1 large red onion, diced
Green and yellow peppers, diced
125ml Nola Original Mayonnaise
2tsp Mustard
Parsley, Paprika and Yellow Seasoning to taste

Peel the 5 potatoes,  cut them into cubes & roast until light golden brown.

Boil 4x eggs and cut them into wedges.

Fry the diced bacon until cooked.

Dice 1 large red onion together with some green & yellow peppers – according to preference.

Add 125ml of Nola Original Mayonnaise to the potatoes.

Add 2 teaspoons of mustard.

Mix all ingredients together including seasoning & layer on a serving platter.

Garnish with grated cheese or fresh parsley.
